  • 1/4 cup all-purpose flour (for streusel)
  • 3 tablespoons cold butter, cut into small pieces (for streusel)
  • 2 tablespoons brown sugar (for streusel)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease an 8×8 inch baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, salt, and 1/4 cup brown sugar. Mix well.
  3. In a separate bowl, whisk together the eggs, milk, 1/4 cup melted butter, and vanilla extract. Pour the wet ingredients over the dry ingredients and stir until just combined.
  4. Gently fold in the diced apples. Pour the mixture into the prepared baking dish.
  5. Prepare the streusel topping: In a small bowl, combine the flour and 2 tablespoons brown sugar. Cut in the 3 tablespoons cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs. Stir in the pecans, if using.
  6. Sprinkle the streusel topping evenly over the oatmeal mixture.
