  • 2 cups cooked, shredded chicken
  • 2 ripe avocados, mashed
  • 1/4 cup plain Greek yogurt (optional, for extra creaminess and protein)
  • 2 tablespoons fresh lime juice
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped celery
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the shredded chicken in a medium bowl.
  2. In a separate small bowl, mash the avocados until mostly smooth. Stir in the Greek yogurt, if using.
  3. Add the mashed avocado mixture, lime juice, red onion, celery, cilantro, and Dijon mustard to the chicken.
  4. Mix all ingredients gently until the chicken is evenly coated and the salad reaches your desired creaminess.
