  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup lager beer (or non-alcoholic beer)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly pour in the beer while whisking continuously to prevent lumps. Cook until the mixture thickens slightly, about 3 to 5 minutes.
  4. Reduce the heat to low. Add the shredded cheddar and Monterey Jack cheese, a handful at a time, stirring until each addition is fully melted and smooth before adding more. Do not allow the mixture to boil.
  5. Stir in the salt, pepper, and cayenne pepper, if using.
  6. Remove from heat and serve immediately with soft pretzels, chips, or vegetables.
