  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (15 ounce) can pure pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk (or milk with 1/2 teaspoon lemon juice added)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt.
  3. In a separate medium bowl, whisk together the sugar and vegetable oil until combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the pumpkin puree and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients. Mix with a spatula until just combined. Do not overmix the batter.
  6. Gently stir in the buttermilk until it is incorporated. The batter will be thick.
  7. Pour the batter into your prepared loaf pan.
  8. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 15 minutes before carefully turning it out onto a wire rack to cool completely.
