Make this easy roasted broccoli recipe to achieve tender insides and caramelized, crispy edges every time. It is a flavorful, healthy side dish ready in under 30 minutes.

Ingredients

Scale
  • 2 large heads of broccoli, cut into uniform florets
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice (optional, for finishing)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the broccoli florets, olive oil, kosher salt, black pepper, and garlic powder. Toss everything well until the broccoli is evenly coated.
  3. Spread the seasoned broccoli in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crisping.
  4. Roast for 15 minutes.
  5. Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the broccoli.
  6. Return the pan to the oven and roast for another 5 to 10 minutes, or until the edges of the broccoli are deeply caramelized and crispy, and the cheese is melted and lightly browned.
  7. Remove from the oven. Immediately transfer the roasted broccoli to a serving dish. If using, drizzle with fresh lemon juice and sprinkle with lemon zest. Serve hot.

Notes

  • For the crispiest results, ensure your oven temperature is high (425°F) and that the florets have space on the baking sheet.
  • If you prefer a stronger garlic flavor, use 2 cloves of fresh minced garlic instead of garlic powder, adding it with the oil before roasting.
  • This recipe works well as a quick weeknight vegetable side or as an impressive dish for guests.
