1 cup creamy peanut butter
1 cup powdered sugar
1/2 cup (1 stick) unsalted butter, softened
1 teaspoon vanilla extract
1/4 teaspoon salt
24 whole graham crackers
12 ounces semi-sweet chocolate chips
2 tablespoons shortening or coconut oil
Instructions
In a medium bowl, combine the peanut butter, powdered sugar, softened butter, vanilla extract, and salt. Mix until the mixture is smooth and well combined. This is your peanut butter filling.
Lay out the graham crackers on a baking sheet lined with parchment paper.
Spread a layer of the peanut butter filling evenly over half of the graham crackers.
Top each filled cracker with a plain graham cracker half to create a sandwich. Press gently.
Place the assembled sandwiches in the freezer for 15 minutes to firm up the filling.
While the crackers chill, prepare the chocolate coating. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely smooth and melted.
Remove the chilled graham cracker sandwiches from the freezer.
Dip each sandwich halfway into the melted chocolate, allowing excess chocolate to drip off. Alternatively, you can drizzle the chocolate over the top.
Place the dipped crackers back onto the parchment-lined baking sheet.
Refrigerate the Buckeye Graham Cracker Bites for at least 30 minutes, or until the chocolate coating is set.
Notes
For a cleaner dip, use a fork to lower the cracker into the chocolate and lift it out, tapping the fork gently on the side of the bowl to remove excess chocolate.
You can make these into bars instead of sandwiches by breaking the graham crackers in half before assembling the peanut butter layer, then cutting the final product after dipping.
Store leftover treats in an airtight container in the refrigerator for up to one week.
