Overnight Cinnamon Roll French Toast Casserole

Make this decadent breakfast ahead of time. You combine store-bought cinnamon rolls with a rich custard, bake it until golden, and top it with the included icing for an easy, sweet brunch.

  • 1 (12.7 ounce) package refrigerated cinnamon rolls (about 8 rolls)
  • 6 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 cup water
  • 1 tablespoon butter, melted

Instructions

  1. Grease a 9×13 inch baking dish with butter.
  2. Separate the cinnamon rolls and place them cut-side down in the prepared baking dish. Keep the icing packets aside for later.
  3. In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, granulated sugar, and brown sugar until well combined.
  4. Pour the egg mixture evenly over the cinnamon rolls in the baking dish. Gently press the rolls down to ensure they soak up the custard.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
  7. Bake for 30 to 35 minutes, or until the casserole is set and golden brown.
  8. While the casserole bakes, prepare the icing. In a small saucepan, combine the reserved icing packets, water, and melted butter. Heat over low heat, stirring until smooth. Do not boil.
  9. Remove the casserole from the oven. Drizzle the warm icing mixture evenly over the top.
  10. Slice and serve this easy cinnamon roll french toast bake immediately.

Notes

  • Using brioche bread instead of canned rolls creates a richer texture for this sweet baked french toast.
  • For extra flavor, sprinkle 1/4 cup of chopped pecans over the top before baking.
  • If you are short on time, you can skip the overnight rest, but allow the casserole to sit at room temperature for 30 minutes before baking.
