  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for batter)
  • 1/2 cup granulated sugar (for batter)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (for dipping bread cubes)
  • 1 cup cubed day-old bread (about 3 thick slices)
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, 1 teaspoon cinnamon, and 1/2 cup sugar for the batter.
  3. In a separate medium bowl, whisk together the melted butter, egg, 1/2 cup milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
  5. In a small bowl, mix the 1/4 cup milk for dipping. In another small bowl, mix the 1/2 cup sugar and 1 teaspoon cinnamon for the coating.
  6. Dip each bread cube quickly into the 1/4 cup milk, letting excess drip off.
  7. Gently fold the soaked bread cubes into the muffin batter.
  8. Divide the batter evenly among the 12 prepared muffin cups.
  9. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  10. While the muffins are still warm, gently roll or sprinkle the tops generously with the cinnamon sugar coating mixture.
  11. Let the muffins cool slightly in the pan before transferring them to a wire rack.

Notes

  • Use slightly stale or day-old bread for the best texture inside the muffin.
  • For an extra bakery-style crust, you can lightly brush the tops of the muffins with melted butter immediately after they come out of the oven before applying the cinnamon sugar.
  • These are excellent served warm with a light dusting of powdered sugar.
