Make a truly unforgettable Caesar salad in 20 minutes. This recipe delivers restaurant-quality results using crisp romaine lettuce, deeply flavorful homemade creamy Caesar dressing from scratch, and perfect crunchy croutons.

Ingredients

Scale
  • 2 large heads romaine lettuce, washed and chopped
  • 1 cup homemade croutons
  • 1/2 cup freshly grated Parmesan cheese, plus more for serving
  • For the Homemade Creamy Caesar Dressing:
  • 2 large egg yolks (use pasteurized for safety)
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1/2 cup olive oil
  • 2 tablespoons grated Parmesan cheese
  • 2 anchovy fillets, minced (optional, for authentic flavor)

Instructions

  1. Prepare the Homemade Creamy Caesar Dressing: In a medium bowl, whisk together the egg yolks, minced garlic, Dijon mustard, Worcestershire sauce, salt, pepper, and lemon juice until combined.
  2. Slowly drizzle in the olive oil while continuously whisking vigorously. Continue adding the oil in a thin, steady stream until the dressing emulsifies and thickens into a creamy consistency.
  3. Whisk in the 2 tablespoons of grated Parmesan cheese and the minced anchovy fillets, if using. Taste and adjust seasoning if needed. Set the dressing aside.
  4. Prepare the Croutons: If you are not using store-bought croutons, toast cubes of stale bread in a skillet with olive oil, salt, and pepper until golden brown and crisp.
  5. Assemble the Salad: In a large bowl, place the chopped crisp romaine lettuce.
  6. Pour about half of the homemade Caesar dressing over the lettuce. Toss gently to coat the leaves evenly. Add more dressing as needed until the lettuce is lightly coated.
  7. Add the croutons and the 1/2 cup of grated Parmesan cheese. Toss briefly one last time.
  8. Serve the salad immediately on chilled plates, topping each serving with extra grated Parmesan cheese for that perfect restaurant style finish.

Notes

  • For a protein-packed meal, add 6 ounces of grilled chicken breast per serving.
  • If you want a quicker dressing without raw egg yolks, substitute the yolks with 1/4 cup of good quality mayonnaise.
  • To achieve the best crunch, add the croutons just before serving the salad.
