1 cup heavy cream
1/2 cup whole milk
4 ounces cream cheese, cubed
1/4 cup grated Parmesan cheese

1/4 teaspoon black pepper
1/4 teaspoon nutmeg
16 ounces frozen chopped spinach, thawed and squeezed dry
Instructions
Melt the butter in a medium saucepan over medium heat. Add the minced shallot and cook until softened, about 3 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Whisk in the flour and cook for 1 minute, stirring constantly to form a roux.
Gradually whisk in the heavy cream and milk until the mixture is smooth. Bring the sauce to a gentle simmer.
Reduce the heat to low. Add the cream cheese cubes and stir until fully melted and the sauce is smooth.
Stir in the Parmesan cheese, salt, pepper, and nutmeg. Continue stirring until the cheese is incorporated.
Add the thoroughly drained spinach to the sauce. Stir well to combine everything.
Cook over low heat for 3 to 5 minutes, stirring occasionally, until the spinach is heated through and the sauce has thickened slightly.
Serve this rich and creamy spinach side dish immediately.
Notes
Squeeze as much water as possible from the thawed spinach. Excess water will thin your sauce.
For a lower-carb option, you can skip the flour and thicken the sauce using only cream cheese and simmering until reduced.
