12 oz pasta (like penne or farfalle)
1 cup basil pesto
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup reserved pasta water
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
Cook the pasta according to package directions. Before draining, reserve about 1/2 cup of the starchy cooking water. Drain the pasta.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Reduce the heat to low. Add the basil pesto and heavy cream to the skillet. Stir until the mixture is just warmed through and combined. Do not let it boil.
Stir in the grated Parmesan cheese until the sauce is smooth and velvety.
Add the drained pasta to the skillet with the sauce. Toss to coat completely.
If the sauce seems too thick, add the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
Season with salt and black pepper. Serve immediately for a flavorful pasta dish.
