Make this family favorite weeknight dinner featuring tender chicken breasts coated in a crunchy, cheesy topping. It bakes golden brown for a satisfying crunch without frying.

  • 4 boneless, skinless chicken breasts
  • 1 cup crushed Ritz crackers
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons melted butter
  • 1 (10.5 ounce) can cream of chicken soup (for optional sauce)
  • 1/2 cup sour cream (for optional sauce)
  • 1 tablespoon Dijon mustard (for optional sauce)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a shallow dish, combine the flour, garlic powder, onion powder, salt, and pepper.
  3. In a second shallow dish, whisk the eggs and milk together.
  4. In a third shallow dish, combine the crushed Ritz crackers, shredded cheddar cheese, and Parmesan cheese.
  5. Pat the chicken breasts dry with paper towels. Dredge each breast first in the flour mixture, shaking off excess.
  6. Dip the floured chicken into the egg mixture, allowing excess to drip off.
  7. Press the chicken firmly into the cracker-cheese mixture to coat both sides completely.
  8. Place the coated chicken breasts in the prepared baking dish. Drizzle the tops evenly with the melted butter.
  9. Bake for 20 minutes.
  10. While the chicken bakes, prepare the optional sauce: Whisk together the cream of chicken soup, sour cream, and Dijon mustard in a small bowl until smooth.
  11. After 20 minutes of baking, remove the dish from the oven. Spoon the creamy sauce over the chicken breasts, or serve the sauce on the side.
  12. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the topping is golden brown and crispy.
  13. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra crispiness, do not pour the sauce over the chicken; serve it alongside for dipping.
  • Serve this dish with steamed green beans or a simple side salad for a complete meal.
  • You can substitute the Ritz crackers with crushed butter crackers or panko breadcrumbs if needed.
