Make a flavorful, simple vegetable side dish using fresh green beans roasted with garlic and Parmesan cheese until crisp-tender.

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper for easier cleanup.
  2. Place the trimmed green beans in a large bowl. Drizzle with olive oil.
  3. Add the minced garlic, salt, and pepper to the bowl. Toss everything together until the beans are evenly coated.
  4. Spread the green beans in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  5. Roast for 12 to 15 minutes, shaking the pan halfway through, until the beans are tender-crisp.
  6. Remove the pan from the oven. Immediately sprinkle the grated Parmesan cheese over the hot beans. Toss gently to coat.
  7. Return the pan to the oven for 2 to 3 minutes, just until the cheese melts and begins to lightly brown.
  8. Serve the roasted Parmesan green beans immediately as a fast vegetable side dish.

Notes

  • For extra crispiness, you can increase the roasting time by a few minutes, watching carefully to prevent burning.
  • If you prefer a slightly softer bean, steam or blanch the beans for 2 minutes before tossing them with oil and seasoning.
  • Use freshly grated Parmesan cheese for the best flavor and melting quality.
