Make this easy Crockpot French Onion Meatloaf for a tender, juicy, and flavorful dinner. Slow cooking infuses the beef with rich French onion soup taste, and topping it with Swiss cheese adds a comforting finish. This hands-off recipe is perfect for busy weeknights.

  • 2 lbs ground beef
  • 1 large yellow onion, thinly sliced and caramelized
  • 1 (10.5 ounce) can condensed French onion soup, undiluted
  • 1/2 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, gently combine the ground beef, caramelized onion, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix until just combined; do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of a 5 or 6-quart slow cooker.
  3. Pour the undiluted French onion soup evenly over the top of the meatloaf.
  4. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours, until the meatloaf reaches an internal temperature of 160 degrees Fahrenheit.
  5. During the last 15 minutes of cooking, remove the lid and place the Swiss cheese slices evenly over the top of the meatloaf. Replace the lid until the cheese is melted and gooey.
  6. Carefully remove the meatloaf from the slow cooker. Let it rest for 5 minutes before slicing and serving with the pan juices spooned over top.

Notes

  • To quickly caramelize the onion, sauté it in a tablespoon of butter over medium-low heat for about 20 minutes until soft and browned.
  • For a richer flavor, use half ground beef and half ground chuck.
  • Serve this hearty family dinner with mashed potatoes or egg noodles to soak up the savory onion jus.
