  • 2 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Lightly coat the bottom of your slow cooker with olive oil.
  2. Place the chicken breasts in the slow cooker. Sprinkle evenly with salt, pepper, garlic powder, and Italian seasoning.
  3. Pour the chicken broth over the chicken. Scatter the chopped sun-dried tomatoes around the chicken.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken breasts from the slow cooker and shred them using two forks. Set the shredded chicken aside.
  6. In the slow cooker, stir together the heavy cream, Parmesan cheese, and minced garlic into the remaining liquid.
  7. Stir in the cornstarch slurry. Cover and cook on HIGH for 10 to 15 minutes, or until the sauce thickens slightly.
  8. Return the shredded chicken to the sauce and stir to coat everything completely.
  9. Cook on LOW for another 10 minutes to heat through. Serve immediately over pasta or rice.

Notes

  • For best results, use chicken breasts that are uniform in thickness.
  • If you prefer a tangier sauce, substitute half of the heavy cream with half-and-half.
