Make this simple, elegant Caprese Chicken dinner using fresh ingredients. This baked recipe results in juicy chicken breasts topped with mozzarella, tomato, and basil, perfect for a quick weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup sliced fresh mozzarella cheese
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper for easy cleanup.
  2. Place the chicken breasts on the prepared baking sheet. Drizzle the chicken with olive oil.
  3. In a small bowl, mix the salt, pepper, and garlic powder. Sprinkle this seasoning mix evenly over both sides of the chicken breasts.
  4. Bake the chicken for 15 minutes.
  5. Remove the pan from the oven. Top each chicken breast with slices of fresh mozzarella and the halved tomatoes.
  6. Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the cheese is melted and bubbly.
  7. Remove the chicken from the oven. Sprinkle the fresh basil over the top of each piece.
  8. Drizzle the balsamic glaze over the chicken before serving.

Notes

  • For extra flavor, you can lightly sear the chicken in a skillet for two minutes per side before baking.
  • If you do not have fresh mozzarella, use low-moisture mozzarella, but add it only for the last 3 minutes of baking to prevent excessive browning.
