2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
For the Swirl: 1/2 cup packed brown sugar
2 tablespoons ground cinnamon
4 tablespoons unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of ground cinnamon. Set this dry mixture aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix only until just combined; do not overmix.
Prepare the cinnamon swirl filling: In a small bowl, combine the brown sugar and 2 tablespoons of ground cinnamon. Mix well.
Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Drizzle with half of the melted butter.
Top with the remaining batter, followed by the rest of the cinnamon sugar mixture and the remaining melted butter. Use a knife to gently swirl the layers together once or twice.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely before slicing.

If you want a cinnamon streusel bread topping, mix 1/4 cup flour, 1/4 cup brown sugar, and 2 tablespoons cold butter until crumbly, and sprinkle over the top before baking.
