Make this easy egg bake casserole for a satisfying, high-protein breakfast or brunch that feeds a crowd. This recipe is simple to prepare and works well for meal prep.

  • 1 pound breakfast sausage, cooked and drained
  • 1 cup frozen tater tots, thawed slightly
  • 12 large eggs
  • 1 cup milk (whole or 2%)
  • 1 cup cottage cheese, small curd
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Spread the cooked sausage evenly over the bottom of the prepared baking dish.
  3. Arrange the slightly thawed tater tots over the sausage layer.
  4. In a large bowl, whisk together the eggs, milk, cottage cheese, salt, pepper, and garlic powder until well combined and slightly frothy. This creates a creamy base.
  5. Pour the egg mixture evenly over the sausage and tater tot layers.
  6. Sprinkle both the cheddar and Monterey Jack cheeses over the top of the egg mixture.
  7. Bake for 35 to 40 minutes, or until the center is set and a knife inserted near the middle comes out clean. The top should be golden brown.
  8. Let the cheesy egg bake rest for 5 to 10 minutes before slicing and serving.

  • For a make ahead breakfast casserole, assemble the entire dish the night before, cover tightly, and refrigerate. Add 5 to 10 minutes to the baking time if baking directly from the refrigerator.
