  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup unsulfured molasses
  • 1/2 cup hot water
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons molasses
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. Beat in the egg until just combined.
  5. Mix in the 1 cup of molasses and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the hot water, mixing on low speed until just combined. Do not overmix.
  7. Pour the batter into the prepared baking pan.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. To make the glaze, whisk together the powdered sugar and 2 tablespoons of molasses in a small bowl. Add milk one tablespoon at a time until you reach a smooth, pourable consistency.
  11. Drizzle the molasses glaze over the cooled gingerbread cake.

  • For an extra tender crumb, sift your dry ingredients before mixing.
  • You can bake this as a Gingerbread Sheet Cake by using a 9×13 inch pan; reduce the baking time slightly.
