Ingredients
Scale
15 ounces whole milk ricotta cheese, drained if watery
2 tablespoons olive oil, plus more for drizzling
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup fresh basil leaves, chopped
1/4 cup hot honey (or regular honey mixed with a pinch of red pepper flakes)
Crusty bread or crackers, for serving
Instructions
Place the drained ricotta cheese, 2 tablespoons of olive oil, salt, and pepper into a food processor.
Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and airy.
Transfer the whipped ricotta dip to a shallow serving bowl.
Drizzle the top generously with the hot honey.
Sprinkle the chopped fresh basil over the honey.
Drizzle a small amount of extra olive oil over the top for shine.
Serve immediately with slices of crusty bread or your favorite crackers for dipping.
Notes
If you do not have a food processor, you can use a hand mixer or stand mixer. Whip the ricotta for 5 minutes until lightened, then gently fold in the remaining ingredients by hand.
For a savory variation, skip the hot honey and top with chopped sun-dried tomatoes, roasted garlic, and fresh herbs.
This creamy cheese appetizer tastes best when served within an hour of making.
