Make this simple, cheesy Rotel dip with sausage and Velveeta. It is a quick party appetizer perfect for game day gatherings.

Ingredients

  • 1 pound ground sausage
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (16 ounce) package Velveeta cheese, cut into cubes
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup milk (optional, for thinning)

Instructions

  1. Brown the ground sausage in a large skillet over medium heat. Drain off any excess grease.
  2. Add the Rotel tomatoes (with their liquid), Velveeta cheese cubes, and softened cream cheese to the skillet with the sausage.
  3. Stir constantly over low heat until all the cheese is completely melted and the dip is smooth and creamy. Do not let it boil.
  4. If the dip is too thick, stir in the milk one tablespoon at a time until you reach your desired consistency.
  5. Transfer the hot dip to a small slow cooker or serving dish to keep warm. Serve immediately with tortilla chips.

Notes

  • For a stovetop version, cook the dip in a heavy-bottomed pot over low heat.
  • If you prefer using a slow cooker, combine all ingredients in the slow cooker insert and cook on low for 2 hours, stirring occasionally until smooth.
  • You can substitute ground beef for the sausage if you prefer a different flavor profile.
