Make this viral sushi bake for a simple, warm casserole version of a California roll. It layers seasoned rice with a creamy imitation crab topping, perfect for potlucks or weeknight dinners.

  • 3 cups cooked sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 pound imitation crab (kani), shredded
  • 1/2 cup mayonnaise
  • 1/4 cup cream cheese, softened
  • 2 tablespoons Sriracha (adjust to taste)
  • 1 tablespoon soy sauce
  • 1/4 cup chopped green onion
  • 2 tablespoons furikake seasoning
  • Nori sheets, for serving
  • Optional: Sliced avocado, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Prepare the sushi rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm cooked sushi rice. Spread the seasoned rice evenly into the bottom of the prepared baking dish.
  3. Make the topping: In a medium bowl, combine the shredded imitation crab, mayonnaise, softened cream cheese, Sriracha, and soy sauce. Mix until fully combined and creamy.
  4. Spread the crab mixture evenly over the layer of sushi rice in the baking dish.
  5. Sprinkle the chopped green onion over the crab layer.
  6. Bake for 15 to 20 minutes, or until the topping is hot and slightly bubbly.
  7. For the final step, turn the oven to broil. Broil for 1 to 2 minutes, watching closely, until the top is lightly browned.
  8. Remove from the oven and immediately sprinkle the furikake seasoning evenly over the top.
  9. Let the sushi bake cool for 5 minutes before serving. Serve warm with nori sheets and sliced avocado on the side for scooping.

Notes

  • For a richer flavor, substitute half of the imitation crab with cooked, flaked salmon.
  • If you prefer a less spicy topping, reduce the Sriracha or omit it entirely.
  • Use high-quality, freshly cooked sushi rice for the best texture in this oven baked sushi rice dish.
