2 carrots, peeled and sliced
2 celery stalks, sliced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 cup gluten free all-purpose flour blend (with xanthan gum)
4 cups low sodium chicken broth
1 cup heavy cream or full-fat coconut milk for dairy free
1/2 cup cold unsalted butter, cut into small pieces
1/2 cup milk (dairy or non-dairy)
Instructions
Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
Stir in the thyme and rosemary. Cook for 1 minute until fragrant.
Sprinkle the gluten free flour blend over the vegetables. Stir constantly for 1 minute to cook out the raw flour taste.
Slowly whisk in the chicken broth until the mixture is smooth. Bring the liquid to a simmer, stirring occasionally until it thickens slightly, about 5 minutes.
Stir in the heavy cream and the shredded chicken. Reduce the heat to low and let it warm through. Stir in the frozen peas and season generously with salt and pepper. Keep the stew at a gentle simmer.
Prepare the dumpling dough: In a medium bowl, whisk together the gluten free baking mix, baking powder, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Pour in the milk and stir just until the dough comes together. Do not overmix; the dough will be sticky.
Drop the dumpling dough by rounded tablespoons directly onto the simmering stew. Place them close together but not touching if possible.
