Make this easy Greek yogurt banana bread for a protein-packed, tender loaf. It uses yogurt to keep the bread soft and moist, making it a great choice for a healthy breakfast or snack.

  • 3 very ripe bananas, mashed
  • 1 cup plain Greek yogurt (full fat or 2%)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup melted unsalted butter or neutral oil
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, Greek yogurt, granulated sugar, brown sugar, egg, and vanilla extract. Mix until just combined.
  3. Pour in the melted butter or oil and stir briefly.
  4. In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients. Mix with a spatula until you just combine the flour. Do not overmix; a few streaks of flour are acceptable.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

Notes

  • Using very ripe, spotty bananas provides the best natural sweetness and moisture for this protein packed snack.
  • You can substitute up to half of the flour with whole wheat flour for a slightly heartier loaf.
  • For a richer flavor, add 1/2 cup of chocolate chips or chopped walnuts to the batter before baking.
