Ingredients

Scale
  • 8 cups chopped romaine lettuce
  • 1 cup shredded iceberg lettuce
  • 1 cup thinly sliced provolone cheese
  • 1/2 cup thinly sliced Genoa salami
  • 1/2 cup thinly sliced pepperoni
  • 1/2 cup thinly sliced ham
  • 1/4 cup thinly sliced red onion
  • 1/4 cup sliced banana peppers
  • 1/4 cup pitted black olives, sliced
  • 1/4 cup grated Parmesan cheese
  • For the Grinder Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the Grinder Dressing: In a small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, oregano, garlic powder, basil, salt, and pepper until smooth. Set aside.
  2. Prepare the vegetables: Place the chopped romaine and iceberg lettuce in a very large bowl.
  3. Add the meats and cheese: Add the provolone cheese, salami, pepperoni, and ham to the lettuce.
  4. Add the remaining toppings: Add the red onion, banana peppers, black olives, and Parmesan cheese to the bowl.
  5. Dress the salad: Pour about half of the prepared Grinder Dressing over the salad ingredients.
  6. Toss the salad: Gently toss everything together until the ingredients are evenly coated with the dressing. Add more dressing as needed for your preference.
  7. Serve immediately for the best crunch.

Notes

  • You can prepare the dressing up to three days ahead and store it in the refrigerator.
  • For meal prep, keep the dressing separate and combine just before eating to maintain the crisp texture of the lettuce.
  • If you want a spicier kick, add a pinch of red pepper flakes to the dressing.
