  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and 1 cup of powdered sugar with an electric mixer until the mixture is light and fluffy.
  3. Beat in the vanilla extract, lemon extract, lemon juice, and lemon zest until just combined.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
  5. Roll the dough into small balls, about 1 inch in diameter. Place them 2 inches apart on the prepared baking sheets.
  6. Bake for 12 to 15 minutes, or until the edges are set but the centers remain pale. The cookies should not brown.
  7. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
  8. While the cookies are still warm, roll them gently in additional powdered sugar until fully coated.
  9. Transfer the cookies to a wire rack to cool completely. Re-roll in powdered sugar once more after they cool for a thicker coating, if desired.
