Make these simple, crispy bites featuring spinach and salty feta cheese, perfect as a Mediterranean appetizer or snack.

  • 10 sheets phyllo dough
  • 2 tablespoons olive oil, melted
  • 10 ounces fresh spinach, chopped
  • 4 ounces feta cheese, crumbled
  • 1 large egg, lightly beaten
  • 1/4 teaspoon ground black pepper
  • Pinch of nutmeg

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
  2. In a bowl, combine the chopped spinach, crumbled feta cheese, beaten egg, black pepper, and nutmeg. Mix until the ingredients are evenly distributed.
  3. Lay one sheet of phyllo dough flat on a clean surface. Brush the entire surface lightly with melted olive oil.
  4. Place a second sheet of phyllo dough directly on top of the first oiled sheet. Brush the top lightly with olive oil again.
  5. Place about two tablespoons of the spinach and feta mixture along one short edge of the stacked phyllo sheets.
  6. Fold the side edges inward over the filling. Roll the dough tightly away from you to form a thin cigar or triangle shape.
  7. Place the finished crisp seam-side down on the prepared baking sheet. Brush the top lightly with any remaining olive oil.
  8. Repeat the process with the remaining phyllo sheets and filling mixture.
  9. Bake for 12 to 15 minutes, or until the crisps are golden brown and crisp.
  10. Remove from the oven and let cool slightly before serving.

Notes

  • If you prefer triangles, cut the stacked phyllo sheets into thirds before adding the filling and rolling.
  • For extra flavor, add a teaspoon of fresh lemon zest to the filling mixture.
  • You can prepare these ahead of time and refrigerate them for up to 4 hours before baking.
