1 cup granulated sugar
1/2 cup packed brown sugar
3 large eggs
1 teaspoon vanilla extract
1 cup unsweetened applesauce
2 cups fresh apples, peeled and chopped (about 2 medium apples)
For the Cinnamon Swirl: 1/4 cup brown sugar mixed with 1 teaspoon cinnamon
For the Glaze (Optional): 1 cup powdered sugar mixed with 2 tablespoons milk
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set this dry mixture aside.
In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and applesauce until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix the batter.
Gently fold in the chopped fresh apples.
