  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese, plus more for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the cut chicken pieces to the pot. Cook until the chicken is lightly browned on the outside, about 5 minutes.
  3. Pour in the chicken broth. Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  4. Add the package of potato gnocchi to the simmering broth. Cook according to the gnocchi package directions, usually about 3 to 5 minutes, until the gnocchi float to the surface.
  5. Reduce the heat to low. Stir in the heavy cream until the broth becomes creamy. Do not let the soup boil after adding the cream.
  6. Stir in the fresh spinach until it wilts into the soup, which takes about 1 minute.
  7. Remove the pot from the heat. Stir in the 1/4 cup of grated Parmesan cheese until melted and combined.
  8. Serve your homemade chicken gnocchi soup immediately with extra Parmesan cheese on top.

Notes

  • For a quicker cook time, use pre-cooked rotisserie chicken instead of raw chicken breasts. Add the shredded chicken when you add the broth.
  • If you prefer a thicker soup, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry, then stir it into the simmering soup before adding the cream.
