Make these soft, chewy peanut butter cup cookies stuffed with a whole chocolate peanut butter cup. This easy recipe delivers a gooey center and rich flavor perfect for any occasion.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 standard size peanut butter cups (unwrapped)
  • 12 mini peanut butter cups (optional, for topping)

Instructions

  1. Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract and peanut butter until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Scoop dough portions, about 2 tablespoons each. Flatten one portion slightly in your palm. Place one unwrapped standard peanut butter cup in the center. Wrap the dough around the candy, sealing it completely to form a ball.
  6. Place the dough balls onto the prepared baking sheets, leaving about 2 inches between them. If desired, press a mini peanut butter cup lightly onto the top of each cookie.
  7. Bake for 10 to 12 minutes, or until the edges are set but the centers still look slightly soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The center will set as they cool, giving you that gooey center.
