Make these easy, no-bake pecan pie balls to capture the rich, nutty flavor of classic pecan pie in a simple, bite-sized dessert perfect for holidays or parties.

  • 1 cup finely chopped pecans
  • 1 cup vanilla wafer crumbs
  • 1/2 cup powdered sugar
  • 1/4 cup light corn syrup
  • 1/4 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (for optional coating)
  • 1 teaspoon coconut oil (for optional coating)

Instructions

  1. Place the finely chopped pecans and vanilla wafer crumbs into a food processor. Pulse until the mixture resembles coarse sand.
  2. Add the powdered sugar, corn syrup, brown sugar, melted butter, vanilla extract, and salt to the food processor. Pulse until the mixture comes together into a cohesive dough ball.
  3. If the dough is too sticky to handle, chill it in the refrigerator for 15 minutes.
  4. Scoop out the dough using a small cookie scoop or spoon and roll it between your palms into 1-inch balls. Place the balls on a parchment-lined baking sheet.
  5. Chill the formed balls for at least 30 minutes to firm up.
  6. For the optional chocolate coating, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth.
  7. Dip each chilled ball halfway into the melted chocolate or drizzle the chocolate over the tops.
  8. Return the coated balls to the parchment-lined sheet. Let the chocolate set completely at room temperature or chill briefly until firm.

Notes

  • You can substitute graham cracker crumbs for vanilla wafer crumbs if you prefer a different base flavor.
  • For a caramel coating variation, melt 1/2 cup of soft caramels with 1 teaspoon of heavy cream and dip the chilled balls.
  • These pecan pie balls taste best when stored in an airtight container in the refrigerator.
