Make these simple pizza muffins for a fast, kid-friendly snack or lunchbox addition using basic ingredients.

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/4 cup pizza sauce

Instructions

  1. Preheat your oven to 400 degrees F. Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate bowl, mix the milk, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the mozzarella cheese and pepperoni slices.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with about 1 teaspoon of pizza sauce.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

  • You can use refrigerated biscuit dough instead of making the batter from scratch for a faster method. Press the dough into the muffin cups and fill with toppings.
  • These freeze well. Cool completely, then store in an airtight container in the freezer for up to one month. Reheat in the microwave or oven.
  • Use your favorite pizza toppings like cooked sausage or chopped bell peppers in place of some of the pepperoni.
