1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley (for garnish)

Instructions
If using wooden skewers, soak them in water for at least 30 minutes before use.
In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, ginger, and black pepper to create the marinade.
Add the cubed chicken to the marinade, tossing to coat completely. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, for best flavor.
Preheat your grill to medium heat (about 375°F) or preheat your air fryer to 380°F.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
For grilling: Place skewers on the preheated grill grates. Cook for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks.
For air frying: Place skewers in a single layer in the air fryer basket (work in batches if necessary). Cook for 10 to 12 minutes, flipping halfway through, until the internal temperature reaches 165°F.
In the last minute of cooking (either method), sprinkle the grated Parmesan cheese evenly over the tops of the skewers. Allow the cheese to melt slightly.
Remove the chicken skewers from the heat. Garnish with fresh parsley before serving.
Notes
For an extra spicy kick, add 1/2 teaspoon of red pepper flakes to the marinade.
These skewers pair well with a side of steamed rice or a simple cucumber salad.
If you prefer a thicker glaze, reserve 2 tablespoons of the marinade before adding the raw chicken, then simmer it in a small saucepan until reduced by half. Brush this reduction over the cooked skewers.
