1 cup cooked corned beef, chopped
1 cup shredded Swiss cheese
1/2 cup drained sauerkraut
8 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 cup Thousand Island dressing
1 teaspoon Dijon mustard
1/4 cup shredded Swiss cheese (for topping)
Rye bread slices or crackers, for serving
Instructions
Combine the chopped corned beef, 1 cup Swiss cheese, sauerkraut, cream cheese, mayonnaise, Thousand Island dressing, and Dijon mustard in the slow cooker insert.
Stir all ingredients together until they are fully combined and smooth.
Cover the slow cooker and cook on LOW for 1.5 to 2 hours, or on HIGH for 1 hour, stirring halfway through.
About 15 minutes before serving, stir the dip again and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
Continue cooking until the cheese on top is melted and bubbly.
Serve the hot dip directly from the slow cooker with rye bread slices or crackers.
Notes
You can use pastrami instead of corned beef for a slightly different flavor profile.
