Make these incredibly flavorful Honey Garlic Butter Roasted Carrots. They are simple to prepare, roast perfectly, and create a sticky, caramelized glaze that makes them a family favorite side dish for any meal or holiday.

Ingredients

Scale
  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. Place the cut carrots in a large bowl.
  3. In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined. This creates your savory glaze.
  4. Pour the honey garlic butter mixture over the carrots. Toss well until every piece is evenly coated.
  5. Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote caramelization.
  6. Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and the edges are slightly caramelized.
  7. Remove from the oven. Sprinkle with fresh parsley before serving immediately.

Notes

  • For extra flavor, you can add 1/4 teaspoon of smoked paprika to the glaze mixture.
  • If your carrots are very thick, cut them into smaller pieces or blanch them for 3 minutes before tossing with the glaze to ensure they cook evenly.
  • This recipe works well for holiday roasted carrots or simple weeknight side dishes.
