Make perfectly caramelized and crispy roasted sweet potato cubes with this easy recipe. This simple side dish works well for weeknight dinners or holiday meals.

Ingredients

Scale
  • 3 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the sweet potato cubes in a large bowl. Drizzle with olive oil.
  3. Sprinkle the salt, pepper, garlic powder, and paprika over the potatoes. Toss everything together until the cubes are evenly coated with oil and seasoning.
  4. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crispiness.
  5. Roast for 20 minutes. Remove the pan and flip the cubes.
  6. Return to the oven and roast for another 10 to 15 minutes, or until the edges are caramelized and the centers are tender.
  7. Serve immediately as a healthy roasted vegetable side dish.

Notes

  • For extra crispiness, soak the cut sweet potatoes in cold water for 30 minutes before drying them completely.
  • If you want a sweet flavor, toss the cubes with 1 tablespoon of maple syrup before roasting.
  • These sweet potato cubes are excellent for meal prep and can be reheated easily.
