  • 1 pound Italian sausage, casings removed
  • 1 pound rigatoni or penne pasta
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and add the diced tomatoes (with their juice) and the dry pasta. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom. The pasta should be nearly tender.
  5. Stir in the heavy cream and continue to simmer uncovered for 2 to 3 minutes until the sauce thickens slightly.
  6. Remove the skillet from the heat. Stir in the Parmesan cheese until the sauce is smooth and creamy.
  7. Add the fresh spinach and stir until it wilts into the sauce. Season with salt and pepper to your preference.
  8. Serve immediately as a quick weeknight pasta dinner.

  • For a spicy sausage pasta, use hot Italian sausage instead of mild.
  • You can substitute smoked sausage or chicken sausage for Italian sausage if desired.
  • If the sauce seems too thick, add a splash more broth or water until you reach your preferred consistency.
