Ingredients
Scale
1 cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, melted
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1 teaspoon cream of tartar
2 teaspoons ground cinnamon
½ cup brown sugar, packed
½ cup caramel sauce (optional, for serving)
Vanilla ice cream (for serving)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
In a medium bowl, whisk together the flour, baking powder, and salt for the cobbler topping.
In a separate bowl, combine the melted butter, granulated sugar, egg, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. This forms your buttery cobbler batter.
In a small bowl, mix the brown sugar, cream of tartar, and ground cinnamon thoroughly to create the cinnamon sugar mixture.
Spread half of the cobbler batter evenly into the prepared baking dish.
Sprinkle half of the cinnamon sugar mixture over the batter layer.
Dollop the remaining batter randomly over the first layer. Do not spread it flat.
Sprinkle the remaining cinnamon sugar mixture evenly over the top layer.
Bake for 25 to 30 minutes, or until the top is golden brown and a toothpick inserted near the center comes out mostly clean. The bottom will be gooey.
Let the cobbler cool for 10 minutes before serving.
Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
Notes
For an extra gooey texture, you can substitute half of the flour with a snickerdoodle cookie mix for a shortcut.
If you want a fruit base, layer 2 cups of sliced apples or peaches on the bottom before adding the first layer of batter.
This dessert tastes best when served warm directly from the oven.
