Ingredients
Scale
1 cup fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1/2 cup water
2 cups milk (dairy or oat milk for a creamy, dairy-free option)
1 teaspoon vanilla extract
Instructions
Combine the sliced strawberries, sugar, and water in a small saucepan.
Heat the mixture over medium heat. Stir often until the sugar dissolves and the strawberries begin to break down, about 5 to 7 minutes. This creates your strawberry syrup.
Remove the syrup from the heat and let it cool for 10 minutes. You can mash the strawberries further with a fork if you prefer a smoother syrup.
Strain the syrup through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the liquid. Discard the solids or save them for another use.
In a pitcher, combine the cooled strawberry syrup, milk, and vanilla extract. Stir well.
Taste the milk and add more syrup if you want a sweeter, more intense flavor.
Chill the strawberry milk for at least 30 minutes before serving cold. For a cafe style drink at home, serve over ice and top with whipped cream.
Notes
For a dairy-free strawberry milk, substitute regular milk with oat milk for extra creaminess.
To achieve the layered look of Korean strawberry milk, pour the cold milk into the glass first, then slowly spoon the thick strawberry syrup down the side of the glass.
This recipe makes a sweet strawberry syrup that stores well in the refrigerator for up to one week.
