Hearty Ground Turkey and Sweet Potato Skillet

Make a filling, one-pan dinner using ground turkey and sweet potatoes. This recipe is quick for weeknights and uses simple ingredients.

  • 1 tablespoon olive oil
  • 1 pound ground turkey (or ground beef)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped zucchini or bell pepper (optional)
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground turkey to the skillet. Break it up with a spoon and cook until browned. Drain off any excess fat.
  3. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 more minute until fragrant.
  4. Stir in the diced sweet potatoes, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Bring the mixture to a simmer. Reduce the heat to medium-low, cover the skillet, and cook for 10 to 12 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
  6. If using, stir in the zucchini or bell pepper during the last 5 minutes of cooking.
  7. Remove the skillet from the heat. Taste and adjust seasoning if needed.
  8. Garnish with fresh cilantro before serving.

Notes

  • For a Southwest flavor boost, add 1/2 teaspoon of dried oregano or a dash of cayenne pepper with the other spices.
  • If you prefer ground beef, substitute it for the ground turkey; the cooking time remains the same.
  • This recipe works well for meal prep; store leftovers in an airtight container in the refrigerator for up to 3 days.
