Easy Make-Ahead Tater Tot Breakfast Casserole

Assemble this hearty, cheesy tater tot breakfast casserole the night before for a simple, crowd-pleasing meal when you bake it in the morning.

  • 1 (32 ounce) bag frozen tater tots
  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese, divided
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
  3. Sprinkle the cooked sausage or bacon and the chopped onion evenly over the tots. Top with half of the shredded cheese.
  4. Layer the remaining tater tots over the cheese mixture.
  5. In a large bowl, whisk together the eggs, milk, salt, and pepper. Pour this egg mixture evenly over the tots in the baking dish.
  6. Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours or overnight.
  7. When ready to bake, preheat your oven to 375 degrees Fahrenheit. Remove the plastic wrap.
  8. Bake covered for 30 minutes.
  9. Remove the foil and sprinkle the remaining cheese over the top.
  10. Bake uncovered for another 10 to 15 minutes, or until the eggs are set and the tots are golden brown and crispy.
  11. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a make ahead breakfast casserole, assemble all layers except the final cheese topping the night before. Keep refrigerated.
  • If you use bacon, cook it until crisp before crumbling.
  • This recipe works well as a freezer friendly breakfast; freeze assembled and uncooked, then thaw overnight before baking.
