  • 12 cups Rice Chex cereal
  • 1 cup chopped pecans (optional add-in)
  • 1 cup pretzel twists (optional add-in)
  • 1 cup semi-sweet chocolate chips (optional add-in)
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal and any dry add-ins like pecans or pretzels. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the butter melts and the sugar dissolves.
  4. Bring the mixture to a rolling boil. Boil without stirring for exactly one minute. Remove the pan from the heat immediately.
  5. Stir in the vanilla extract and baking soda quickly. The mixture will foam up.
  6. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently fold the cereal until it is completely coated. Work quickly.
  7. Spread the coated cereal mixture in a single layer onto the prepared baking sheets.
  8. Bake for 30 minutes, stirring the mix every 10 minutes to prevent burning and ensure even coating.
  9. Remove from the oven. If using chocolate chips, sprinkle them over the warm mix immediately. Let it cool completely on the pans until the toffee hardens and becomes crunchy.
  10. Once cool, break the mix into pieces. Store in an airtight container.

Notes

  • For a peanut-free version, omit pecans and ensure your cereal is certified peanut-free.
  • If you want a richer flavor, substitute half of the Rice Chex with Corn Chex cereal.
  • Toffee sets fast; have all your ingredients measured and ready before you start cooking the syrup.
