8 oz block feta cheese, drained
4 oz cream cheese, softened
1/4 cup plain Greek yogurt
2 tablespoons olive oil, plus more for drizzling
1 clove garlic, minced
1 teaspoon lemon juice
1/4 teaspoon black pepper
2 tablespoons honey, for drizzling
1/4 cup shelled pistachios, roughly chopped
1 tablespoon fresh herbs (like thyme or parsley), chopped (optional)
Instructions
Place the drained feta cheese, softened cream cheese, Greek yogurt, 2 tablespoons of olive oil, minced garlic, lemon juice, and black pepper into a food processor.
Process the ingredients until the mixture is completely smooth and airy. Stop and scrape down the sides as needed. This usually takes 2 to 4 minutes.
Transfer the whipped feta dip to a shallow serving bowl. Use the back of a spoon to create a slight well in the center.
Drizzle the top generously with honey.
Sprinkle the chopped pistachios and fresh herbs over the honey and dip.
Drizzle a small amount of extra olive oil over the top just before serving.
Serve immediately with pita bread, crackers, or fresh vegetables.
Notes
For a spicy kick, use hot honey instead of regular honey.
You can prepare this dip up to one day ahead; store it covered in the refrigerator and let it sit at room temperature for 20 minutes before serving.
