15 oz whole milk ricotta cheese, drained
2 tablespoons extra virgin olive oil
1 teaspoon lemon zest
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup hot honey (or more to taste)
2 tablespoons shelled pistachios, roughly chopped
Fresh rosemary sprigs for garnish (optional)
Instructions
Drain the ricotta cheese for at least 15 minutes to remove excess liquid. Place the drained ricotta, olive oil, lemon zest, salt, and pepper into a food processor.
Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the dip is completely smooth and airy.
Transfer the whipped ricotta dip to a shallow serving bowl. Use the back of a spoon to create a slight well or swirl in the center.
Drizzle the hot honey evenly over the top of the dip.
Sprinkle the chopped pistachios over the honey. Garnish with small sprigs of fresh rosemary, if using.
Serve immediately with crostini, crackers, or fresh vegetables for dipping.
Notes
If you do not have a food processor, you can use a high-powered blender or a stand mixer with a whisk attachment. Whip until very smooth.
